Abstract

The increasing use of snakehead fish has led to an increase in fish production, both from farmed and wild. Because the characteristics of fish collagen are influenced by the environment in which the fish live, this research was conducted to characterize collagen from snakehead fish scales and to determine differences in collagen between farmed and wild. The method used in this research is an experimental method by comparing the morphology, amino acids and collagen peptides of snakehead fish scales from different habitats.Morphologically, the scale collagen of farmed snakehead fish is smooth, tight and solid on the surface, while the other is hollow on the surface. The amino acid composition of scale collagen from farmed snakehead fish was higher in leucine and glycine but lower in lysine compared to wild. Collagen peptide from the scale collagen of the farmed snakehead fish has a molecular weight of 271.316 Da, while that in wild is 318.330 Da. Based on the characteristics obtained, the two extracted collagens can have promising applications in the food, medical, and cosmetic industries, and the farmed snakehead fish scale collagen is better than that wild.
